Ingredients
  

Salad Base

  • 2 Pounds Cauliflower Florets
  • 1 Cup Vegan Sour Cream
  • 1 Cup Vegan Mayonnaise
  • 3 Tablespoons Ranch Seasoning

Optional Mix-ins

  • 1/4 Cup chopped Carrot
  • 1/4 Cup Chopped Cucumber
  • 1/4 Cup Chopped Bacon
  • 1/4 Cup Green Onions
  • 1/4 Cup Chopped Celery

Instructions
 

  • Bring a large stockpot of water to a boil. Blanch the cauliflower florets by submerging them in boiling water for 3 minutes. While the water boils, fill a large stock-pot half way with cold water.
  • Remove the Cauliflower Florets from boiling water and drain in a colander. Submerge cauliflower in cold water for 3 minutes and drain. If cauliflower does not drain properly, the salad will be too watery.
  • In a large mixing bowl, mix Vegan Mayonnaise, Vegan Sour Cream, and Ranch Seasoning.
  • Gently add drained cauliflower to the mixing bowl. Gently stir cauliflower into seasonings.
  • Gently stir in your favorite mix-ins. Refrigerate 2 or more hours until chilled.

Notes

To get the potato salad appearance, chop the cauliflower into bite size chunks.
You’ll have the perfect allergen friendly side for summer picnics and cookouts!
Allow the cauliflower to drain completely.

I never liked potato salad! Really! It wasn’t until I was in my late 20’s and my friend’s mother, who was renowned for her potato salad, said I just had to try hers.

It was the first ever potato salad I had tasted that had more flavor than any other and the texture was firm, not mush! Her potato salad was rich with flavor and had the perfect texture!

When you make this delicious No-Tato salad, you’ll have rich flavor with cauliflower that’s firm and surrounded in the rich flavors of Sour Cream, Mayonnaise, and Delicious Ranch Seasonings. All without gluten, grain, dairy, egg, soy, corn, almond, cashew, peanut, sesame, or nightshade!

Last year, I taught my All Access VIPs to make this indulgent No-Tato salad in a cooking class.

How Are There Grains In Mayonnaise?

I’m so glad you asked. Grains sneak into mayonnaise in the form of white vinegar, and thickening agents. Grains hide in the sneakiest places. It’s important to know your grains and your grain based ingredients.

Can Cauliflower Really Taste Like Potato Salad?

No, it’ can’t! But we can make it even better by Breaking The Recipe! In this recipe we use a technique called blanching to get the cauliflower perfectly firm. Blanching also ensures that we won’t cook our cauliflower beyond the point of perfect tenderness.

What If I’m Allergic To One Of The Ingredients

Please don’t ever try using an ingredient that is unsafe for you. It’s not worth it. There are plenty of ways to Break The Recipe, so that you can enjoy it safely. That’s what I teach my clients in our cooking classes and coaching sessions.

Why Is My No-Tato Salad Watery?

A watery No-Tato salad is usually the result of not draining the cauliflower enough. After rinsing the cauliflower, allow it to drain well. You might consider using a salad spinner to remove even more of the water
