Seriously there are allergens in Mayonnaise? Yes…

Most people are aware of the eggs in mayonnaise, some egg-free versions use substitutes use soy…so that’s not going to work…and wait for it…VINEGAR IS MADE FROM GRAIN!

Allergen-Free Mayonnaise

Looks like it’s time to break a recipe!

What’s in mayonnaise anyway? Eggs, oil, vinegar, salt, and some seasoning.

So…we can use some chickpea flour in place of the egg, we’ll use olive oil, and salt… What about the vinegar? What’s going to give our mayonnaise its trademark tart taste? Two options: either omit it all together or use lemon juice for the tart taste that makes you forget it’s allergen free.

WAIT! What about texture??? No one wants a mayonnaise that is runny… How are we doing to make it fluffy and thick? Xanthan gum, baking soda, and cream of tartar. We don’t have to use a lot, but if we whip it up an an electric mixer we’ll have mayonnaise for a sandwich, salads, casseroles, and dips!

Wait…how will baking soda and cream of tartar make the mayonnaise light and fluffy if it’s refrigerated? What’s going on?

The baking soda and cream of tartar will activate each other and release gas which will get trapped in the mayo and make it light and fluffy! But Enough Explaining!

Let’s Break A Recipe!

Mayonnaise (Vegan, Egg-Free, Allergen Friendly)

Whip up some allergen free mayonnaise in minutes.
Prep Time 5 minutes
Cuisine American

Equipment

  • Electric Mixer
  • Mixing bowl
  • Measuring Cup
  • Measuring Spoons

Ingredients
  

  • Cup Coconut Milk
  • ½ Cup Chickpea Flour
  • ¼ Cup Olive Oil
  • 1 Tablespoon Lemon Juice
  • ½ teaspoon Cream of Tartar
  • ¼ teaspoon Baking Soda
  • ¼ teaspoon Xanthan Gum

Instructions
 

  • In a small mixing bowl, mix chickpea flour with olive oil and coconut milk with an electric mixer.
  • In a small bowl, mix cream of tartar, baking soda and xanthan gum. 
  • Sprinkle dry ingredients on top of batter.  Mix for 1-2 minutes until mixture is thick.
  • With mixer running add lemon juice and mix one additional minute. 
  • Refrigerate for 30 minutes. Mayonnaise will be fluffier and thicker after standing.
  • Use as you would any other mayonnaise. 

Notes

  • The longer the mayonnaise sits, the fluffier it gets.  
  • Use it casseroles, dips, salads, smear it on sandwiches!
