How is that even possible?

You might be wondering, where are the allergens in grilled vegetables? They’re usually hiding in the oils or sprays used in preparing them. The toppings, sauces, and seasonings can also contain allergens. Normally we don’t think of these foods as containing allergens. I certainly didn’t.

Breaking out in hives and tracking down the cause to the soy or corn based ingredients in sauces, seasonings, and non-stick sprays taught me otherwise. There’s a lesson I only needed to learn once!

Grilled Zucchini and Carrots

Grilled Zucchini and Carrots, the perfect side dish for any meal.
Prep Time 10 minutes
Cook Time 20 minutes
Course Side Dish
Cuisine American
Servings 8

Equipment

  • 1 Grill Tray
  • 1 Grilling Spatula
  • 1 Measuring Spoon set
  • 1 Mixing Bowl with lid.
  • 1 knife/ crinkle cutter
  • aluminum foil to line grill tray.

Ingredients
  

  • 1 Large Carrots
  • 3 Medium/ Small Zucchini
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Fresh Cilantro (snipped)

Instructions
 

  • Wash vegetables. Slice carrots and zucchini into ¼ inch thick slices. Keep carrots separate from zucchini. (I like to use a crinkle cutter for this step. The vegetables just look prettier, they seem too sear better too!)
  • Line a grill tray with aluminum foil.
  • In a medium mixing bowl toss carrots with 1 Tablespoon of olive oil. Evenly spread carrots on grill tray.
  • Toss zucchini with remaining olive oil and cilantro and layer on top of carrots.
  • Light grill and bring temperature to 400°.
  • Grill Vegetables 15-20 minutes keeping temperature at 400°.
  • Remove vegetables from grill tray and toss. Enjoy.

Notes

Let’s See It Happen!

I can’t stop eating these delicious grilled carrots and zucchini.  Maybe it’s because I grew up eating steamed veggies.  Sometimes for a quick veggie on a weeknight there were canned veggies; not a favorite of mine.   My family believed it wasn’t a real meal unless there were vegetables, not a bad idea, especially if dessert comes after!

When I started cooking for myself, I was able to be more adventurous; which is good because adulting requires a lot of cooking.  

Confession–steaming veggies is still my weeknight go to method of preparing vegetables! Variety of technique and nuance in flavor keep me going!  So here I am, grilling my veggies and enjoying the crisp texture and full flavor all summer long!

I’ve learned that my favorite way to enjoy the sweetness of carrot is to heat it just to the point of scorching.  This caramelizes the natural sugar and seems to deepen the flavor!  Because we’re not boiling or steaming, we don’t lose many nutrients!  

By layering the carrots first and the zucchini on top, the carrots caramelize perfectly, while keeping the zucchini from burning.  Huge one pan cooking win!
