Course Dessert
Cuisine Allergen-Friendly, American, Cane Sugar-Free, Corn-Free, Dairy Free, Egg free, Gluten Free, Grain Free, Kid-Friendly, Soy-Free Vegan
Servings 36 bars

  • Food Processor
  • 1 9 x 13 baking dish
  • 1 2 Quart Sauce Pan
  • 1 Stainless Steel Whisk

Maple Magic Sauce

  • 2/3 Cup Organic Maple Syrup
  • 2/3 Cup Organic Coconut Oil
  • 1 Tablespoon Tapioca Starch
  • 1/2 Cup Water

  • 1/2 Cup Pitted Dates
  • 1/4 Cup Organic Coconut Oil
  • 1 1/2 Cups Shredded Coconut
  • 1/2 teaspoon Cinnamon / Pumpkin Spice optional

Layering Options

  • 1/2 Cup Chopped Pecans
  • 1/2 Cup Shredded Coconut
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Dried Apricots chopped
  • 1/2 Cup Raisins
  • 1/2 Cup Organic Cacao Nibs

Preparing the Maple Magic Sauce

  • In a 3 quart sauce pan, whisk the Organic Maple Syrup with the Tapioca Starch until smooth.
  • Add the 2/3 Cup Organic Coconut Oil and whisk over low heat until the organic coconut oil melts completely.
  • Add the Water and continue whisking over medium-low heat until the ingredients reach a simmer.
  • Simmer for 7 minutes, whisking the whole time. If the sauce is too hot, it may spatter, decrease the temperature to low if needed. Simmer the Magic Maple Sauce for a full 7 minutes.
  • Remove the Magic Maple Sauce from the stove and allow it to cool while you prepare the crust and layers.

Preparing Crust & Layers

  • Preheat the oven to 350°F. Grease a 9 x 13 baking dish.
  • While the oven preheats, chop the Dates in a large food processor. When the dates are chopped add 1/4 Cup Coconut Oil and mix 2 minutes.
  • When the dates and coconut oil and smooth, add 1 1/2 Cups Shredded Coconut to the food processor and mix on high for 2-3 minutes.
  • Evenly spread the crust into the baking dish. Using a metal spoon, press the crust into the dish.
  • Thinly sprinkle your layering ingredients over the top of the crust. I recommend adding the shredded coconut last, this keeps separation between the crust and gives more texture to the bars. The crust will stay crispy while the layering coconut will be chewy and rich because of the Magic Maple Sauce.
  • When all ingredients are layered, evenly pour the Magic Maple Sauce over the bars and bake for 22-25 minutes. The bars are done when the edges are crispy.
  • Cool the bars to room temperature, then refrigerate them for 4 hours, or overnight. This helps the coconut oil solidify. The bars will cut easily and remain firm by cutting them when they are completely chilled.

  • If you aren’t avoiding cane sugar, you can use sweetened condensed coconut milk in place of the magic maple sauce.
  • Allow the bars to set for at least 8 hours in the refrigerator, this solidifies the coconut oil and will give the bars a firm crust.,

A Slice Of The Grain-Free Lifestyle

This recipe is one I struggled with for years!. Creating the texture, appearance, and texture of a traditional Magic Bar, took some serious time, but it was worth it! Magic bars were one of the recipes I spent years wishing for, hoping for, and even cheating on. I even snuck a magic bar from a cookie platter on Christmas once or twice, and I paid for it!

If you’re a member of my Facebook group, Grain-Free Lifestyle and Support Community, you’ve probably heard me say “having safe alternatives that make me feel like I’m not missing out is how I’ve been able to stick with the Grain-Free Lifestyle” I prefer to avoid grains by having safe alternatives, and so these magic bars were worth working for!

Regardless of how many times I had failed, I was dreaming of a Christmas with Grain-Free Magic Bars! That would never happen if I didn’t try again.

Just after I finished writing my Thanksgiving Cookbook, I picked up my draft of the Magic Bar recipe, and I made some modifications. Since I have family members who are avoiding cane sugar, I decided to make this batch without cane sugar.

The first result was alright. It was completely cane sugar-free, the flavor was perfect, but the bars fell apart! I enjoyed the first test batch of the season, and I kept working at it. At the same time we were trying to figure out what was wrong with our beloved 10 year old Flat Coated Retriever, Canon. He was getting tired and experiencing what we thought were age related difficulties.

As things got worse, we took care of him, consulted our vet, and then we got the call with the results of his bloodwork…what we thought was old age, was cancer. We were told we could lose him in 6 weeks. Immediately, we rushed to the emergency vet, but the news was worse than our vet feared.

Our hearts broke when we heard he had maybe a few days at best…and they wouldn’t be good days. He would go from appearing tired to visibly suffering. We weren’t going to let him suffer. We took him home, where our 3 other dogs got to say their goodbyes.

A couple of amazing friends helped us make his final hours special. And then we returned to the vet to say our final farewell.

When we came home, my body was filled with the nervous energy that accompanies an unexpected loss. I couldn’t settle. So I decided to bake another batch of magic bars. I tried the modifications I had been thinking might do the trick. When the magic bars cooled, I refrigerated them and went to bed.

The next morning, we woke up and began our first day without Canon. No sweet Flat Coat Kiss before I got out of bed, no nudges for pets while I made my morning tea, life without Canon left our home and hearts empty.

We took care of our dogs and did our best to get through the day. Around 4:00, the same time when Canon would greet me after work, I decided to slice into the magic bars and see how they came out. They sliced perfectly. They looked like magic bars, and they tasted exactly like Magic Bars!

While I ate that first bar, something fabulous happened…I wasn’t sad. I spent the last 24 hours aching with grief…but with that bar, my taste buds over rode the rest of my feelings and I just enjoyed a yummy cookie!

Since I broke this recipe the day Canon passed, I’m calling these Magic Bars, Canon’s Magic Bars. Canon was a wonderful dog who always made us laugh. He’d bring me a toy everyday when I came home from work, he’d melt in my lap like chocolate melts in your pocket on a hot day. He was pure love. His love filled our home. We love him dearly and we miss the way he filled our home with magic.

Why Are These Bars Called Cannon’s Magic Bars?

The day we lost our beloved Flat Coated Retriever, Canon, my whole body ached with grief and loss. When we returned home after saying our goodbyes to him, I was wired with the anxiety and nervous energy that comes from an unexpected loss of a beloved family member. I decided to try another batch of the magic bars. I made modifications to the recipe and let it cool over night in the fridge.

The next morning was our first morning without Canon, and I noticed every space where Canon’s sweet snoot was missing. From the first kiss in the morning, to tail wags while I made my morning tea, to him begging for snuggles at the breakfast table. My heart ached, and it was the first day of life without Canon.

What Do The Grain-Free Magic Bars Taste Like?

They are sweet and gooey and taste like magic bars should! Keep them cold and the magic bars will remain firm and have the perfect texture. My taste testers couldn’t tell they were Grain-Free. And when they learned they’re Grain-Free, they all asked for the recipe!

Can I Use Agave Or Honey In Place Of The Maple Syrup?

The bars would still be Grain-Free and cane sugar-free if you do. Agave is highly processed, but it’s a vegan option. Local honey is much less processed and will give a rich Christmas flavor to your Magic Bars. If you’re looking for a faster option, you can replace the Magic Maple Sauce with a can of sweetened condensed coconut milk, however the bars will not be cane sugar-free.

What If I Don’t Have A Food Processor? Can I Make This Recipe Without One?

Great question. To do that, you’d have to chop up the dates super finely…you’d need a blender. Chopping the dates in a blender will do the same fine chopping a food processor will do, it will just take longer. Transfer the chopped dates to a mixing bowl and blend the remaining ingredients for the crust with a hand mixer. I haven’t tried this, so if you do, let me know how your bars turn out by leaving a comment below.

Why Do The Bars Have To Be Refrigerated After They Cool?

When we bake without grains, we need to replicate the appearance, texture, and flavor of a traditional baked good. That means we need a firm crust. Refrigerating the magic bars overnight allows the coconut oil to solidify completely. Trying the bars before they are completely cold will give you a completely different cookie.
