Since my last entry, I Broke A Recipe for Purple Coleslaw

I’ve taught a class on Strawberry Shortcake Trifle and Smoky Chicken Cheeseburgers.

All without gluten, grain, dairy, egg, soy, corn, almond, cashew, peanut, sesame, or active yeast!

Roast chicken, bacon ranch pasta salad, hearty veggie soup, smoky chicken cheeseburgers, purple coleslaw, and roasted Brussel sprouts are on the menu this week.

Soup is one food that I enjoy 12 months a year, it helps make sure I get enough vegetables on a hot day. And when it’s too hot out, I eat a bowl of cold soup for lunch!

I also made another Strawberry Shortcake Trifle on the 25th. When I taught the class the first time, my mic was off! Since I needed to record it a second time, I decided to share some of the trifle with neighbors managing food allergies in my local Buy Nothing group.

On Sunday June 23rd, I taught my Smoky Chicken Cheeseburger Class. I love grilling outside, so I had to make sure that at least one of my cooking classes this summer was out at the grill.

Summer cookouts are always loaded with hidden with grains. The appetizers, dips, snacks, buns, seasonings, rubs, and of course the desserts are loaded with grains and allergens.

I’ve spent enough time sitting on the sidelines watching others eat to know how hard that can be. However, those days are over!

In addition to my smoky chicken cheeseburgers, I enjoy grilled sweet ginger chicken, lemon garlic chicken, or grilled salmon.

Some of my favorite Grain-Free Side Dishes are pasta salad, no-tato salad, grilled beets, and creamy mac’n cheese.

No cookout is complete without dessert! I always enjoy desserts that travel well such as chocolate chip cookies, chocolate cream pie, mini-cakes, and of course my Strawberry Shortcake Trifle.

I’m not! Really.

I took time off Breaking New recipes so that I could just enjoy a little bit of life and open my pool. No one can do it all, so sometimes I just sit back and enjoy my own recipes! Just like you, I have my old favorite recipes that I return to again and again.

My sheet pan pasta dinner is one of them. My husband and I took a team approach to the recipe this time. He prepared the sheet pan dinner before he left for work. After I got home, I baked it, cooked the pasta and whipped up the Wicked Simple White Sauce!
