Since my last entry, I Broke A Recipe for Loaded Roasted Cauliflower and Strawberry Shortcake Trifle

I’ve taught The Basics of Grain-Free Bread Baking, and Sheet Pan Pasta!

All without gluten, grain, dairy, egg, soy, corn, almond, cashew, peanut, sesame, or active yeast!

I made time to enjoy the garden and I’ve been spending time outdoors in the afternoons.

I love writing outside! Although with my pups and all their toys, we play as much as I write. The weather’s nice so I was hoping to grill some cheeseburgers made with homemade Grain-Free Bread Crumbs.

They were amazing! I was able to sear the burgers perfectly without them sticking to the grill trays. Huge win! Watch for that recipe soon.

When I think of summer flavor, I think of freshly picked strawberries, warmed by the sun, with fresh whipped cream. However with a dairy allergy, that’s been off the menu for a while. Of course I tried all the dairy-free substitutes, but they were loaded with hidden grains!

Each and every time I found one that I could enjoy safely, it melted too quickly, had a flavor that didn’t seem quite right, or the texture didn’t match the rich cream I was dreaming of!

Since moving, I haven’t found a farm that has the organic practices I’m looking for, so I by my organic strawberries from a local market.

But I needed strawberry shortcake. After testing several different versions, my favorite my strawberrry shortcake trifle.

Can you believe this delicious trifle has no gluten, grain, dairy, egg, soy, corn, almond, cashew, peanut, sesame, or nightshade?

The trifle cream has a rich consistency that doesn’t separate. The shortcake soaks up the wonderful flavor of the cream so that it’s perfectly moist.

I shared my yummy strawberry shortcake trifle with some co-workers and friends. Each time, I got the “There’s no way this is Dairy-Free” reaction.

My husband has a May birthday. Since everyone deserves pizza and cake on their birthday, you know I’m going to deliver. My husband is not a fan of fresh strawberries, so he asked for a different kind of trifle.

So I Broke The Recipe and made him a Brownie Trifle! The Grain-Free Brownies are rich and chocolaty and balance well with the creaminess of the Trifle Cream. And because of the combination of flavors, and textures, it’s relatively low sugar.
