Breaking New Recipes

Since my last entry, I’ve experimented with Grain-Free Sourdough, strawberry shortcake, salted caramel brownies, and loaded cauliflower bites!

I’ve even taught a class on making a Grain-Free Dairy-Free White Pizza—-it’s positively heavenly!

All without gluten, grain, dairy, egg, soy, corn, almond, cashew, peanut, sesame, or active yeast!

You mean besides my journal being a week late?

Yup! I took time off and enjoyed 9 hours of crafting with my friends. That meant I didn’t do much writing. But we had so many laughs and crafts, that it was worth it 10x over.

I had a week off of school, so there was lots of recipe developing including a recipe for a strawberry shortcake!

Just as I’m often tired…I’m quite curious…and after months of researching I feel ready to explore Grain-Free Sourdough Bread! More about that below.

I’ve never had sourdough in my life! But I’ve gotten so many people asking me about it, I figured why not try it. I spent a few months researching the different methodologies and decided I had learned enough to start my journey.

Many of the people I’ve chatted with were interested in sourdough as an alternative to commercially available yeast, which often is cultivated using corn sugar. For this reason, I decided I would use a completely yeast-free method. Knowing the process to cultivate a Yeast-Free Starter can take up to 10 days, I waited for Spring Break.

Here’s what I learned:

  • My starter did best at around 72 degrees Fahrenheit.
  • It had live cultures which grew and responded to the flour I fed them.
  • My starter could not maintain bubbles because I didn’t use a binder in it.

What does that mean—-It means I was able to grow the necessary cultures for sourdough…Now I need to create a structure that will allow the starter to grow in size the way a traditional starter does.

I’m saving this for summertime when I’ll have the time to develop a starter and a sourdough bread recipe!

I love strawberry shortcake, don’t you?

But avoiding grains, dairy, egg, soy, corn, almond, cashew, peanut, and other allergens means I have to be creative.

I decided to create a shortcake recipe in a beehive shaped mini-cake pan. Since I had extra batter, I also made some shortcake in muffin tins.

I used my homemade strawberry jam, the cake, and I’m about half way through Breaking The Recipe for a “Coconut Whip” that has the flavor I want but needs work on its texture.

It tastes like whipped cream, but it doesn’t hold its shape at room temp. More testing required!
