When I learned I had to avoid dairy, I searched everywhere for a good ranch. Every one I found contained something I couldn’t have.

Soy in this one, corn in that one, potato starch in another, modified food starch.

It all added up to a big list that would just make me sick!

Which is why I decided to create my own recipe for Dairy-Free Ranch Sauce!

Without:

  • Gluten
  • Eggs
  • Soy
  • Corn
  • Almond
  • Cashew
  • Sesame
  • Nightshade

So let’s make a delicious healthy Dairy-Free Ranch Sauce Not just any sauce, a creamy sauce, one that’s loaded with hidden veggies, and will become a part of your weekly menu.

If only they tasted as good as creamy pasta sauce!

They do now! We are going to cram 2 pounds of cauliflower into this Dairy-Free Ranch Sauce, and you won’t notice it at all!!

This delicious Ranch Sauce is made with Dairy-Free Sour Cream, 2 pounds of puréed Cauliflower, Ranch Seasoning, and a few other ingredients.

Now that I’ve told you what’s in this delicious sauce, let’s talk about what’s not in it:

In addition to being Gluten-Free, Dairy-Free it’s also made without fillers or preservatives!

Why is this important? Because fillers don’t contribute flavor, texture, or nutrition. They can often harm our gut. So when we can avoid them, we’re healthier for it!

We are going to make a creamy Dairy-Free Ranch Pasta, with healthy ingredients and loaded with hidden veggies!

The recipe for this dish is so simple it’s hardly a recipe at all!

No, I’m serious!

Here’s the breakdown:

Steam & Puree your cauliflower

Simmer the bacon you’re adding to the sauce.

Add the sour cream and seasonings

Thicken the sauce.

Pour it over pasta!

I do have a few recommendations however. Steam and puree your cauliflower ahead of time.

You are going to need a large skillet. If you don’t have one, here’s the one we use at our house.

I like using one pot for my meat and sauces, and this skillet is big enough to do it!

Don’t worry I’ll still give you a recipe so you can pin it for later.

Bacon Ranch Pasta

An easy recipe for a creamy Dairy-Free Bacon Ranch Pasta loaded with flavor and hidden veggies.

Equipment

  • large skillet
  • Food Processor or Cooking Blender
  • large stockpot
  • whisk
  • Liquid Measuring Cups
  • Dry Measuring Cups
  • Silicone Utensils

Ingredients
  

  • 12 Ounces Applegate Turkey Bacon
  • 1 Cup Water
  • 16 Ounces Dairy-Free Sour Cream I use 1 batch of my recipe.
  • ¼ Cup Grain-Free Flour
  • ¼ teaspoon Xanthan Gum
  • 2 Pounds Cauliflower (steamed and pureed)
  • 1 Pound Grain-Free Pasta
  • ¼ Cup Ranch Seasoning

Instructions
 

  • Bring a pot of water to a boil.  Steam and Purée Cauliflower.
  • Snip turkey bacon.  In a large skillet, simmer 1 cup water, add bacon to skillet and simmer 3 minutes
  • Add dairy-free sour cream and whisk into skillet.  Sprinkle flour over the top, whisk in flour.  Sprinkle Xanthan gum over the top, whisk in xanthan gum.  Return to a simmer.  Whisking as the sauce heats.
  • Add puréed cauliflower to skillet.  Stir in cauliflower and ranch seasonings.  Simmer 5 minutes to allow seasonings to flavor sauce. 
  • Top your pasta with Bacon Ranch Sauce and Enjoy!

I use a grain-free flour I blend from chickpea, tapioca, and coconut flour.  It’s easy to use and it’s one flour for all my baking.  Click here for the recipe.

Helpful Tips For This Recipe

  • Make sure the dairy-free sour cream is cool when you add it to the water. The Grain-Free Flour and xanthan gum will mix smoothly into it. If the sour cream and water are warm, the Xanthan Gum and Flour will clump. Haven’t we all made enough lumpy sauces for a lifetime? I know I have!
  • The pureed cauliflower can be made a day ahead of time and stored. If you do this, the recipe will be ready by the time the pasta is cooked.
  • Simmer the sauce at least 5 minutes, but not more than ten. We’ re adding a lot of dehydrated seasonings to our sauce, and they need water! The water in the cauliflower will be absorbed by the seasonings and disperse their flavor into the sauce.

When you enjoy this recipe you’ll wonder which bistro you’ve gone to. But it’ll be a lot lighter on your budget than if you ordered out! 😉

FAQ

Can I make this recipe without the ranch seasonings?

Of course! The best recipe is the one that is safe for you. You should never cook with ingredients that are unsafe for you.

In this recipe seasonings contribute flavor, they don’t affect the structure of the recipe. They do provide nutrients, but if you can’t have them, it’s best to omit them. You could always Break The Recipe and substitute with another safe seasoning!

Can I make this recipe without the cauliflower?

Sure, but it won’t be as creamy or as nutritious. When I made the sauce without the cauliflower, I used 8 ounces of Grain-Free pasta instead of a pound.

What if I don’t want to use bacon?

Simmer 1 or 2 threads saffron in the water before adding the sour cream. This will contribute a rich flavor to your sauce. You could even add a drop of liquid smoke!

Can I make this recipe without Xanthan Gum?

In this recipe, the xanthan gum helps to emulsify the sauce so it doesn’t separate or clump after cooling. If you don’t mind your sauce separating or clumping after it cools you don’t need it.
